Wash the red kidney beans, sorting through and removing any bad beans that float to the top.

Drain the beans and refill with clean water, allowing them to soak overnight.

Wash and roughly chop the vegetables: both red bell peppers, one large green bell pepper, half of the large sweet onion, and the entire red onion.

In a pot, add the soaked beans and enough water to cover them. Bring to a boil, then reduce to a simmer until the beans are fork tender.

Remove the smoked turkey necks from the pot and allow them to cool before shredding the meat off the bone. Reserve the cooking liquid.

In a pan, add about 1 tablespoon of olive oil and brown the hot link sausages to build flavor.

Remove the sausages from the pan and place them in a mesh strainer to drain excess oil. Soak up some of the remaining oil in the pan with a paper towel, leaving about half a tablespoon.

Add 1 stick of Kerrygold garlic and herb butter to the pan and let it melt, mixing with the browned bits at the bottom.

Add the browned sausages back into the pan along with the shredded turkey meat and the soaked beans. Mix everything together.

Add enough hot water to cover the beans, ensuring not to lower the pot's temperature too much.

Season the mixture with garlic powder, onion powder, a few dashes of cayenne pepper, crushed black peppercorn, and about half a tablespoon of Slap Your Mama Creole seasoning. Mix well.

Bring the mixture to a boil, then add the smoked turkey neck bones on top, mixing gently before covering with a lid and reducing the heat to let it cook for a couple of hours.
