They are characterized by their unique knot shape and dark brown crust, achieved through a boiling process in a baking soda solution before baking. 1

Add 1 cup of warm water to a bowl.

2

Stir in 3 teaspoons of active dry yeast and let it sit for 5 minutes.

3

In a separate bowl, combine 2 and 1/4 cups of all-purpose flour, 2 tablespoons of sugar, and 1/2 teaspoon of salt.

4

After 10 minutes, add the yeast mixture to the dry ingredients and mix to form a dough.

5

Knead the dough on a floured countertop for about 5 minutes until it is not too sticky.

6

Place the dough in a bowl sprayed with olive oil cooking spray to prevent sticking, cover it, and let it rise for 1 hour.

7

Prepare the beer cheese by mixing 8 oz of cream cheese, 6 oz of shredded sharp cheddar, and 6 oz of shredded mozzarella in a bowl.

8

Add 2 teaspoons of smoked paprika, 1 teaspoon of garlic salt, 1/2 teaspoon of black pepper, and 1 and 1/4 cups of homemade pale ale to the cheese mixture.

9

Preheat the smoker to 225°F and smoke the cheese mixture for 1 hour.

10

Once the dough has risen, cut it in half and set one half aside.

11

Cut the other half into 1-inch strips and roll each strip into a rope.

12

Shape each rope into a pretzel by forming a loop and twisting the ends together.

13

Melt 1/2 stick of butter and brush it onto the pretzels, then sprinkle with pretzel salt.

14

Place the pretzels in the smoker and cook until golden brown.
