Pour 1 1/4 cups of all purpose flour into a bowl.
Add 1 tablespoon of sugar and 1/2 teaspoon of salt, then pulse to combine for 2-3 times.
Add 12 tablespoons of cold, cubed salted butter and 8 tablespoons of chilled shortening, diced.
Pulse for 15-20 seconds until the mixture resembles little pebbles.
Add the remaining flour, sugar, and salt, then pulse until crumbly and resembles cornmeal.
Pour in chilled water and chilled vodka, then pulse to combine.
Divide the dough into 2 equal pieces, wrap each tightly in plastic wrap, and chill in the fridge for 1 hour.
For the filling, combine 4 cups of fresh blueberries with 1 cup of sugar and let sit at room temperature for 1 hour.
After an hour, add 3 tablespoons of cornstarch, 1 tablespoon of lemon juice, 1/4 teaspoon of ground cinnamon, a pinch of ground nutmeg, and a pinch of salt to the blueberries, and stir until no cornstarch is visible.
Roll out one piece of dough on a floured surface into a 12-inch circle and transfer it to a deep dish pie plate.
Scoop the blueberry filling into the crust, spreading it out evenly.
Roll out the second piece of dough into a rectangle measuring about 13 by 10 inches, then cut it into 8 strips using a butter knife.
Lay out 4 strips on top of the filling, spaced evenly, and weave in the remaining 4 strips to create a lattice top.
Trim excess dough from the edges with kitchen scissors, then pinch or roll the edges for a rustic look.
Brush the lattice top with a beaten egg and sprinkle 1 tablespoon of sugar on top.
Bake in a preheated 425 degree oven for 25 minutes, then reduce the temperature to 375 degrees and continue baking for another 30-35 minutes until the top is golden brown and juices are bubbling.
