Today, variations exist across Austria and neighboring countries, with each region adding its own twist to this comforting dumpling dish.

In a large bowl, combine 100 g all-purpose flour and 1 teaspoon salt.
Add 150 ml water or milk and gradually incorporate while stirring.
Beat the dough with a wooden spoon or whisk until it becomes smooth and elastic, slightly sticky and bubbling when lifted.
Let the dough rest for 10 to 15 minutes.
Bring a large pot of salted water to a boil.
Using a spätzle press or board with a knife, drop small portions of dough into the boiling water.
When the knöpfli float to the surface, cook for 1 to 2 minutes, then remove with a slotted spoon and drain.
Melt 200 g grated Gruyère and 200 g grated Emmental cheese in a large pan or bowl.
Mix the hot knöpfli with the melted cheese until the cheese coats the dumplings and everything is sticky and evenly mixed.
Melt 2 tablespoons butter in a pan over medium heat and add the sliced onions.
Cook the onions until golden brown and crispy.
Serve the knöpfli arranged on plates, topped with crispy onions and garnished with fresh chives.
