This dish is often enjoyed at backyard barbecues, casual gatherings, and as a quick meal option.

Cut 1 pound of boneless beef short ribs into roughly 1 inch by 1 inch pieces and lay them out in a quarter sheet tray.
Place the beef chunks in the freezer for about 15 to 20 minutes.
In a tall-sided container, measure 125 grams of mayonnaise, 15 grams of diced onion, 60 grams of ketchup, 25 grams of sriracha, 15 grams of yellow mustard, 60 grams of bread and butter pickles, and half a clove of garlic (smashed and chopped).
Add 2 grams each of salt and coarse ground black pepper to the mixture.
Use an immersion blender to blend the sauce until smooth, then taste and adjust if necessary.
Scoop the sauce into a pint container and refrigerate while finishing the burger prep.
After 20 minutes, remove the beef from the freezer and grind it in a food processor on high speed for about 20 seconds until it is loose and crumbly.
Gently toss the ground beef to combine, ensuring even distribution of fat.
Measure out the beef into six 3-ounce balls on a sheet tray lined with parchment paper, being careful not to overwork the meat.
Pre-smash the patties by gently squeezing the balls in your hands, then placing them on parchment and smashing them down with the flat bottom of a pot.
Slice a whole peeled shallot as thinly as possible and rinse it to reduce pungency, then set aside.
Slice a dill pickle thinly and set aside.
Prepare burger toppings: pickles, sliced shallots, burger sauce, trimmed and washed green leaf lettuce, and squishy brioche hamburger buns.
