Mix 600 g of fresh pike with a pinch of salt and 500 g of cream in a food processor until the mixture is stiff, being careful not to overmix.
Form the mixture into dumplings using a spoon.
Place the dumplings into water just below boiling and cook for 3 minutes.
Turn the dumplings over and cook for another 3 minutes on the other side.
Mix the beetroot with cumin seeds, salt, and a splash of vinegar.
Test the beetroot with a sharp prong to see if they are ready.
Serve the pike dumplings with the beetroot and garnish with fresh herbs, red chard, dill, and watercress.
