Healthy Breakfast Egg Muffins

Preheat the oven to 350°F (175°C).
Grease a muffin tin with cooking spray or oil.
In a mixing bowl, whisk together the eggs and milk until well combined.
Add salt, black pepper, and herbs to the egg mixture and stir.
Chop the spinach, bell peppers, onion, and mushrooms into small pieces.
In a separate bowl, mix the chopped vegetables and cheese together.
Distribute the vegetable and cheese mixture evenly into the muffin tin cups.
Pour the egg mixture over the vegetable mixture in each cup until just full.
If using bacon, add small pieces on top of the egg mixture in each cup.
Bake in the preheated oven for 18-20 minutes, or until the egg is set and lightly golden.
Remove from the oven and let cool for a few minutes before removing from the tin.
Serve warm or allow to cool completely and store in the refrigerator.
