Instructions

  1. 1Boil water in a large pot and cook the ramen noodles according to package instructions until al dente.
  2. 2Drain the noodles and set aside, reserving some cooking water.
  3. 3In the same pot, heat sesame oil over medium heat until shimmering.
  4. 4Add minced garlic and ginger, sauté until fragrant, about 1-2 minutes.
  5. 5Stir in chopped kimchi and cook for another 2-3 minutes until heated through.
  6. 6Pour in the broth and bring to a simmer.

  12. 12In a separate pot, bring water to a boil and gently poach the eggs until whites are set but yolks are still runny, about 3-4 minutes.

  • 4 cups water
  • 1 package Shin Ramyeon noodles
  • 1/2 cup sliced green onions
  • 1/2 cup sliced mushrooms
  • 1/2 cup sliced carrots
  • 1 egg (optional)
  • 1 tsp sesame oil
  • 1 tsp soy sauce
  • 1/2 tsp chili powder (optional)

Instructions

  1. 1In a pot, bring 4 cups of water to a boil.
  2. 2Add the Shin Ramyeon noodles to the boiling water and cook for 4-5 minutes until they are soft.
  3. 3While the noodles are cooking, prepare the vegetables: slice the green onions, mushrooms, and carrots.
  4. 4Once the noodles are cooked, add the sliced vegetables to the pot and cook for an additional 2-3 minutes.
  5. 5If using, crack an egg into the pot and stir gently to poach it in the broth.
  6. 6Add the seasoning packet that comes with the noodles, along with the sesame oil and soy sauce.
  7. 7Stir everything together and let it simmer for another minute.
  8. 8Taste the broth and adjust the seasoning with chili powder if you prefer it spicier.
  9. 9Remove from heat and serve hot, garnished with additional green onions if desired.
