Today, künefe has gained popularity beyond Turkey, with variations appearing in Middle Eastern and Mediterranean cuisines.

- ●rose water
- ●pistachios
- ●cinnamon

Instructions
- 1Prepare the sugar syrup by combining sugar, water, and lemon juice in a saucepan; bring to a boil and simmer for 10 minutes.
- 2Remove from heat and add rose water; set aside to cool.
- 3Preheat the oven to 350°F (175°C).
- 4Melt the butter in a large pan over medium heat.
- 5Add the kataifi pastry to the melted butter; toss to coat evenly and cook until golden, about 5-7 minutes.
- 6Spread half of the kataifi mixture evenly in a greased baking dish.
- 7Layer the unsalted cheese over the kataifi base, spreading it evenly.
- 8Top with the remaining kataifi mixture, pressing down gently.
- 9Bake in the preheated oven for 25-30 minutes until the top is golden brown.
- 10Remove from the oven and immediately pour the cooled sugar syrup over the hot künefe.
- 11Allow to soak for 10 minutes before serving.
- 12Garnish with crushed pistachios and a sprinkle of cinnamon before serving.

Instructions

- 7Using a fork or a food processor, blend the mixture until smooth and creamy.

- 9Transfer the babaganoush to a serving bowl and drizzle with additional olive oil.
- 10Garnish with fresh parsley and pomegranate seeds if desired.

- 2Fluff the bulgur with a fork to separate the grains.
- 3Add the olive oil, lemon juice, salt, black pepper, cumin, and paprika to the bulgur. Mix well to combine all the flavors.
- 4Fold in the chopped parsley, green onions, and diced tomatoes gently until evenly distributed.
- 5Drizzle the pomegranate molasses over the mixture and stir to combine.
- 6Taste and adjust seasoning if necessary, adding more salt or lemon juice as desired.
- 7Cover the bowl and let it sit for another 10 minutes to allow the flavors to meld.
