Chop 1 onion into large chunks and add to a pot.

Place the lid on and let it simmer for 2 minutes.

Remove from heat and let it stand for 20 minutes to infuse.

Drain the fish into a colander, picking out the chunks of onion, garlic, and bay leaves.

Pour the liquid into a jug.

Melt 40 grams of butter in a saucepan over low heat.

Stir in 40 grams of plain flour and cook for a couple of minutes.
