Use fresh or canned fish, season with pepper, salt, thyme, and a seasoning cube, and add onion. Cook for about 5 minutes until the fish is soft.
In a bowl, combine 500 g of flour, 1 teaspoon of baking powder, 0.5 teaspoon of salt, and 200 g of cold butter. Mix until it reaches a breadcrumb texture.
Add 1 egg (reserve some for egg wash) and cold milk gradually until a dough forms. Allow the dough to rest.
Debone the cooked fish carefully, ensuring no bones remain.
In a pot, heat a little vegetable oil, add onion, salt, and the prepped vegetables (green peas, carrot). Stir and season to taste.
Mash the deboned fish and mix it with the cooked vegetables. Dissolve 1 tablespoon of corn flour in water and add it to the filling to bind it together.
Roll out the rested dough and cut it into shapes using a cutter. Use egg wash on the edges, add filling, and seal the pies.
Place the pies on a baking tray, make small slits on top for steam to escape, and brush with egg wash before baking.
Bake in the oven for 20 to 30 minutes until golden brown.
