Slice 12 spring onions roughly.

Heat a pan on medium-high and add 1 tablespoon of olive oil.

In a bowl, pour boiling water over the smoked haddock to purge excess salt and parcook the fish for a couple of minutes.

Add 250 grams of baby spinach to the pan with the spring onions and cook down until wilted.

Place the parcooked fish fillets in 4 corners of the pan.

Spoon some of the smoky seasoned water over the fish.

Sprinkle 100 grams of cheddar cheese over the fish and season with black pepper.

Crumple 4 sheets of filo pastry and place them on top of the filling in the pan.

Grate a little more cheese on top of the filo pastry and drizzle with olive oil.

Bake in the oven at 200 degrees Celsius (400 degrees Fahrenheit) until golden and crisp.
