Preheat the oven to 350°F (175°C).
Melt the unsalted butter in a small saucepan over low heat.
Layer sheets of phyllo dough in a greased baking dish, brushing each layer with melted butter.
Chop the pistachios and walnuts, then combine with sugar, cinnamon, and ground cloves.
Spread a layer of the nut mixture over the phyllo layers in the baking dish.
Continue layering phyllo and nut mixture until all ingredients are used, finishing with phyllo on top.
Cut the baklava into diamond shapes with a sharp knife.
Bake in the preheated oven for 30-35 minutes, or until golden brown.
While baking, combine water, sugar, honey, lemon juice, and vanilla in a saucepan; bring to a boil and simmer for 10 minutes.
Remove baklava from the oven and immediately pour the hot syrup over it.
Allow to cool completely before serving, garnishing with sesame seeds if desired.
