Soak beans in cold water overnight.
Drain and rinse beans, then place in a pot with fresh water and bring to a boil for 5 minutes. Discard the water and set beans aside.
In a large pot, heat oil or a combination of oil and fat, and sauté chopped onions, carrots, and root vegetables until golden yellow, about 20 minutes.
Add diced smoked meat and sauté for another 15 minutes to release flavors.
Add half a liter of water to prevent sticking, then add bay leaves, black pepper, halved tomatoes, and the prepared beans.
Pour in 4.5 liters of water, bring to a boil, and cook for 20 minutes, stirring occasionally to prevent sticking.
Remove and peel the tomatoes, chop them, and return to the pot. Cook for another hour, stirring occasionally.
After an hour, remove and peel the bell peppers, mash them, and return to the pot.
Adjust seasoning with salt as needed, considering the saltiness of the smoked meat.
Prepare a roux by heating fat and adding minced garlic, then flour and paprika. Cook briefly and add to the pot, stirring well.
Let cook for an additional 5 minutes before serving, garnished with chopped parsley.
