Vegan Mapo Tofu

1 tub silken tofu
1 teaspoon sesame oil
1/8 teaspoon ground Sichuan peppercorns
1/4 cup green scallions

Heat 1 teaspoon of vegetable oil in a pan over medium heat.

Add 2 teaspoons of minced garlic and 1 teaspoon of finely grated ginger; cook for about 1 minute until fragrant.

Add 1 tablespoon of chili bean sauce; cook for about 30 seconds to release flavors.

Stir in 1/2 cup of vegan beef crumbles; cook for about 1 minute on medium heat.

Prepare the sauce by mixing 1/2 cup of vegan chicken stock, 1 tablespoon of cornstarch, 2 teaspoons of sugar, and 1 teaspoon of gluten-free soy sauce.

Pour the sauce mixture into the pan with the beef crumbles; turn the heat up to medium-high to thicken.

Gently fold in 1 tub of silken tofu without breaking it too much, pushing from the edges to the center.

Once thickened, turn off the heat and add 1 teaspoon of sesame oil and 1/8 teaspoon of ground Sichuan peppercorns; stir gently to combine.

Add 1/4 cup of green scallions and gently mix in.

Plate the dish and serve with warm white rice or quinoa; garnish with additional scallions and red chili peppers if desired.
