Vegan Mapo Tofu

300g silken tofu
50g Shiitake mushroom
50g oyster mushrooms
1 stalk spring onion
2 garlic cloves
1 inch fresh ginger
1 tbsp tamari or soy sauce
1.5 tbsp chili bean sauce
2 tsp Sichuan peppercorns
1 tsp arrowroot powder
1/2 cup of water
Pinch of Himalayan salt

Place the arrowroot and 2 tbsp of water in a small bowl and mix well to combine together. Set aside.

Heat the frying pan over medium heat. Dry fry the Sichuan peppercorns until fragrant about 3 minutes and crush them. Set aside.

In the same frying pan, add the garlic and ginger. Saute until itโ€™s fragrant and turning slightly brown.

Add chopped mushrooms and let the mushrooms cook about 3 minutes.

Add the tamari, chili bean sauce, Sichuan pepper and water. Stir it well to combine together.

Add the tofu and simmer for 3-5 minutes.

Add the arrowroot mixture and stir it well until it thickens.

Sprinkle some salt if you need to.

Sprinkle with spring onion and toasted sesame before serving.
