Vegan Broccoli Cheese Soup

1 medium onion
3 cloves garlic
1 grated carrot
2-3 tablespoons extra virgin olive oil
2 cups cauliflower florets
3-3.5 cups broccoli florets
3 cups bone broth or chicken stock
1/2 cup soaked cashews
1/2 teaspoon sea salt
2 tablespoons nutritional yeast

Chop one medium onion.

Grate one carrot.

Smash three cloves of garlic.

Heat 2-3 tablespoons of extra virgin olive oil in a large dutch oven.

Saute onions until soft and translucent for about 2-3 minutes.

Add grated carrot and smashed garlic to the pot.

Add 2 cups of cauliflower florets and 3-3.5 cups of broccoli florets.

Pour in 3 cups of bone broth or chicken stock.

Bring to a simmer and cook for about 15 minutes until soft.

In a Vitamix, add 1 cup of bone broth, 1/2 cup of soaked cashews, 1/2 teaspoon of sea salt, and 2 tablespoons of nutritional yeast.

Blend until smooth, then add half of the sautéed veggies.

Fish out the cauliflower to maintain texture in the broccoli.

Puree in batches, being careful not to over puree.

Pour the blended mixture back into the pot and mix well.
