Vegan Broccoli Cheese Soup

1 large onion, diced
2 cups diced potatoes
1/2 cup chopped carrots
1 liter vegetable broth (low sodium, Whole Foods brand)
6 cups broccoli, bite-sized pieces
1 teaspoon onion powder
1/2 teaspoon turmeric
1 tablespoon dijon mustard
1/2 cup nutritional yeast
1 tablespoon lemon juice
cracked pepper to taste

Saute one large diced onion in a pan without oil until translucent, adding vegetable broth as needed to prevent sticking.

Boil 2 cups of diced potatoes and 1/2 cup of chopped carrots until soft.

In a blender, combine the boiled potatoes and carrots with another liter of vegetable broth and blend until creamy.

Pour the blended mixture back into the pot with the sautéed onions.

Add 6 cups of bite-sized broccoli pieces to the pot and cook until just barely soft.

Stir in 1 teaspoon onion powder, 1/2 teaspoon turmeric, 1 tablespoon dijon mustard, 1/2 cup nutritional yeast, 1 tablespoon lemon juice, and cracked pepper to taste.

Cook for an additional 5-10 minutes until the broccoli is soft and the soup reaches the desired thickness.
