Boil the eggs until hard-boiled.
Remove the eggs and set aside.
In a sauté pan or pot, heat vegetable oil.
Add one tablespoon of turmeric and fresh chilies.
Add the onions and sauté until tender.
Mix in fresh tomatoes and tomato paste, cooking for 5 minutes.
Blend onion, garlic, parsley, water, and vegetable oil to create a seasoning broth.
Add 600 to 800 ml of water to the mixture and simmer until thickened.
Season with salt and lemon juice, simmer for 10 minutes.
Add the eggs back into the sauce, cover, and let simmer for another 10 minutes.
Adjust seasoning with salt and black pepper as needed.
Let simmer for an additional 5 minutes before serving.
