Using lettuce is a low-carb alternative, while omitting casing reduces cost.
1. Schneide dein Fleisch in wolfgerechte Stücke. Trenne hier das magere Fleisch und den Bauch in zwei Schüsseln.
2. Gebe den Schweinebauch in einen Topf mit Wasser. Das Wasser sollte geradeso den Schweinebauch abdecken.
3. Koche den Bauch nun für 1 - 1,5 Stunden.
4. Mahle deine Gewürze in einer Gewürzmühle fein.
5. Schneide die Zwiebeln in kleine Stücke. Dünste sie im Anschluss mit etwas Butter glasig.
6. Wenn der Bauch durchgegart ist, kannst du ihn aus dem Wasser holen. Das geht am einfachsten mit einem Sieb. Achte darauf, dass du die Kochbrühe nicht wegschüttest. Du brauchst sie später noch.
7. Gebe die Zwiebeln zum Fleisch.
8. Wolfe die Fleisch Zwiebel Masse durch die kleinste Lochscheibe deines Fleischwolfs.
9. Gebe die Gewürze zur Masse hinzu und vermenge das Ganze.
10. Knete die Masse kräftig durch, damit eine schöne Bindung entsteht.
11. Füge nun nach und nach etwas Kochbrühe zur Masse hinzu. Die Konsistenz sollte etwas dünner sein, als du vielleicht denkst. Sie zieht beim Kochen nochmal nach.
12. Fülle die Masse in Gläser oder Kaliber 38 Därme ab. Achte darauf, dass möglichst wenig Luft in die Gläser gelangt.
13. Verschließe die Gläser, gebe sie mit Wasser in deinen Topf und koche die Gläser für ca. 2 Stunden ein. Im Darm kannst du sie Alternativ bei 82 Grad für 45 Minuten brühen
14. Fertig ist deine Zwiebelwurst. Ich wünsche dir gutes Gelingen und viel Spaß beim Nachmachen! :)
