4 pieces of Matjes herring
1/2 cup fresh lettuce
1/4 cup sour pickles
1/4 cup onions

Rinse the Matjes herring under cold water and pat it dry with paper towels.

Season the herring with salt and pepper on both sides.

Heat a grill or pan over medium heat and lightly oil it.

Grill or pan-fry the herring for about 3-4 minutes on each side, or until cooked through and golden brown.

While the herring is cooking, prepare the bread rolls by slicing them in half.

Spread mayonnaise and mustard on the inside of each bread roll.

Add a layer of fresh lettuce on the bottom half of each roll.

Place the cooked herring on top of the lettuce.
