Sambusa, a beloved snack in Somalia, has roots tracing back to the Middle East and is often enjoyed during Ramadan or festive occasions. These savory pastries symbolize hospitality and community, often filled with spiced meat or vegetables. Today, sambusas have gained popularity beyond Somalia, appearing in various forms across East Africa and the Middle East.

Mix flour, salt, and water in a bowl until a dough forms. Knead until smooth, about 5-7 minutes.
Cover the dough with a damp cloth and let it rest for 30 minutes.
Heat vegetable oil in a skillet over medium heat. Sauté chopped onion and garlic until translucent, about 3-4 minutes.
Add ground beef to the skillet and cook until browned, breaking it apart, about 5-7 minutes.
Stir in cumin, coriander, black pepper, and chopped green chilies. Cook for another 2-3 minutes.
Remove from heat and mix in chopped cilantro and lemon juice. Let the filling cool.
Divide the rested dough into equal portions and roll each into a thin circle.
Place a spoonful of filling on one half of each circle. Fold the dough over to create a half-moon shape.
Seal the edges by pressing with a fork or pinching with fingers.
Heat oil in a deep pan over medium-high heat. Fry sambusas until golden brown, about 3-4 minutes per side.
Remove sambusas and drain on paper towels.
Serve warm, garnished with sesame seeds.
