300 grams beef (thinly sliced)
1 medium onion (finely chopped)
50 grams bacon
2 cloves garlic (crushed)
¼ tsp thyme (dried; divide into two 1/8 parts)
½ cup apple cider vinegar
2 tbsp olive oil
salt and pepper to taste
half an onion (finely chopped)
1 clove garlic (crushed; I used 3 cloves here)
1 carrot (chopped)
a bay leaf
1 cup brown stock
6 pcs olives
3 pcs tomatoes (seeded and diced)
1 orange (for peel and zest)

Marinate the beef with 1 medium onion, 50 grams of bacon, 2 cloves of crushed garlic, ¼ tsp of thyme, ½ cup of apple cider vinegar, 2 tbsp of olive oil, salt, and pepper to taste.

In a clay pot, add half an onion, 1 clove of crushed garlic, 1 chopped carrot, a bay leaf, and the marinated beef along with all of the marinade juice.

Pour in 1 cup of brown stock.

Add 6 olives and 3 diced tomatoes.

Add the peel and zest of 1 orange.

Cover and slowly simmer until the beef is tender.
