Honey is a natural sweetener that can replace corn syrup.
Score the chestnuts with an X on the flat side to prevent bursting.
Boil the chestnuts in water for 10 minutes to soften the shells.
Drain the chestnuts and peel off the outer shells while still warm.
Prepare a syrup by combining granulated sugar and water in a saucepan.
Heat the syrup over medium heat until it reaches a gentle boil.
Add the peeled chestnuts to the syrup and simmer for 30 minutes, stirring occasionally.
Remove the chestnuts from the syrup and let them cool slightly.
In a separate pan, melt butter and add vanilla extract and salt.
Coat the chestnuts in the butter mixture until evenly covered.
Return the chestnuts to the syrup and let them soak overnight for maximum flavor.
The next day, remove the chestnuts and place them on a wire rack to dry.
Once dried, they can be stored in an airtight container.
