Mix 3 tablespoons of olive oil, 6 grated garlic cloves, juice of one lemon, one small grated onion, 1 tablespoon of red pepper paste (or tomato puree), salt to taste, half a teaspoon of black pepper, 1 teaspoon of oregano, 1 teaspoon of paprika, half a teaspoon of cumin powder, and 1 teaspoon of red pepper flakes in a bowl to create the marinade.
Add 2 tablespoons of yogurt to the marinade and mix well.
Cut 2 chicken fillets thinly into halves and place them into the marinade, ensuring they are well coated.
Allow the chicken to marinate for at least 2 to 4 hours or overnight in the fridge for best results.
Ensure the grill pan is hot and cook the chicken on high flame for 5 to 7 minutes on both sides, applying excess marinade while cooking.
Turn the chicken over when charred; it is ready when cooked and charred on both sides.
Prepare the salad dressing by mixing 1 grated garlic clove, 2 tablespoons of extra virgin olive oil, salt to taste, 1 teaspoon of red pepper flakes, 1 teaspoon of oregano, 1/4 teaspoon of black pepper, and 1 tablespoon of lemon juice in a bowl.
Slice half an onion and mix it with salt to taste and 1/2 teaspoon of sumac; leave aside.
Slice the grilled chicken and prepare the salad with sliced lettuce leaves, cucumbers, radishes, capsicum (bell pepper), olives, tomatoes, and finely chopped parsley.
Place the sliced grilled chicken pieces over the salad and drizzle the aromatic dressing around.
Gently toss the salad and enjoy immediately.
