500ml thickened cream whipped
405ml apricot nectar
2 table sp sugar
6 tea sp cornflour
large can apricot halves in juice

Prepare a 23cm round springform tin by lining it with baking paper.

In a bowl, combine the crushed sweet biscuits and melted butter, then press the mixture into the base of the prepared tin.

In another bowl, beat the softened cream cheese until smooth, then add the caster sugar, lemon juice, and whipped thickened cream, mixing until combined.

Pour the apricot nectar and gelatine mixture into the cream cheese mixture and stir until well combined.

Pour the cheesecake mixture over the biscuit base in the springform tin and refrigerate until set.

For the topping, combine the apricot nectar, sugar, and cornflour in a saucepan and cook until thickened, then let cool before spreading on top of the cheesecake.
