In a large bowl with a hand mixer or stand mixer with whip attachment, add egg whites and whip on high speed until it reaches stiff white peaks; set aside.

In a measuring cup, add evaporated milk, egg yolks, melted butter, and vanilla; whisk until well incorporated. Set aside.

In a large bowl, add flour, sugar, baking powder, and salt; whisk or stir until well combined.

Make a well in the center of the dry ingredients and add the wet ingredients; whisk until smooth.

Gently add and fold in the egg whites into the batter.

Then add and fold in the chocolate chips.

Preheat griddle to 350 degrees or heat a large pan over medium heat, spray with cooking spray or butter.

Ladle about 1/4 or 1/2 cup batter for each pancake onto the griddle or pan.

Cook pancakes on both sides for about 3-4 minutes or until tops are covered with bubbles and the edges are brown and cooked.

Turn and cook on the other side.
