Momos are a beloved street food originating from Tibet, gaining immense popularity in Nepal and India. Traditionally filled with meat or vegetables, they are often enjoyed with spicy dipping sauces. In Nepal, momos are a staple at festivals and gatherings, symbolizing hospitality and community. Today, variations abound, with different fillings and cooking methods, making them a cherished dish across South Asia and beyond.

In a large mixing bowl, add all the vegetables and mix them with salt and oil, letting them sit for at least 15 minutes to absorb flavors.
Prepare the dough using all-purpose flour, adding 0.5 teaspoon salt and a little water to form a medium consistency dough.
Knead the dough until it starts to come off your hands and cover it to rest for 10 minutes.
Chop tomatoes and red chilies, blend them into a fine paste.
In a wide pan, heat 1 tablespoon oil and add the paste, cooking on high flame for about 7-8 minutes to remove the raw taste of tomatoes and chilies.
Add soy sauce to the mixture for flavor and color, cooking for an additional 5-6 minutes until the mixture thickens and water evaporates.
Once the filling is ready, let it cool.
Divide the dough into small balls, slightly larger than marbles.
Roll each ball into a thin circle, place a spoonful of filling in the center, fold it over, and seal the edges.
Grease the steamer and arrange the momos in it, steaming for 15 minutes on medium flame until cooked through.
