1/2 teaspoon pepper
1/2 teaspoon salt
1/4 teaspoon celery seeds
1 teaspoon Italian seasoning
1 teaspoon minced garlic
1 medium chopped onion

Preheat the oven to 400°F and place baked potatoes inside for about 1 hour until soft.

Heat up the pressure cooker and add 2 tablespoons of olive oil, spreading it around.

Add the 3 lb pork roast to the pressure cooker and brown the top of it.

Season the pork roast with 1/2 teaspoon of pepper and 1/2 teaspoon of salt.

Add 1/4 teaspoon of celery seeds, 1 teaspoon of Italian seasoning, and 1 teaspoon of minced garlic to the pork roast.

Add 1 medium chopped onion to the pressure cooker.

Pour in 1 cup of water into the pressure cooker.

Seal the pressure cooker and turn the heat back up to high.

Once the pressure cooker reaches pressure, turn the heat down to medium and cook for about 50 minutes under pressure.

After 50 minutes, allow the pressure to naturally release before opening the cooker.

Remove the pork roast from the pressure cooker and let it rest for about 10 minutes before cutting into it.

Serve the pork roast with the concentrated juice from the pressure cooker over it.
