Cover the seasoned pork roast and refrigerate overnight.

Chop bell peppers and onions.

Heat cooking oil in a pan until hot.

Add the pork roast to the pan and brown on all sides for 5-6 minutes each side.

Remove the pork roast and drain excess grease from the pan.

Add chopped onions to the pan and caramelize until brown and translucent.

Add bell peppers, celery, and garlic to the pan with the onions.

Pour in 32 ounces of chicken stock and stir.

Return the pork roast to the pan with the vegetables and stock.

Cook for 4-5 hours until the internal temperature of the pork roast reaches 150°F and the meat is falling apart.
