- 4Place the pork roast in a roasting pan and surround it with the quartered onion, carrots, and potatoes.
- 5Pour the chicken broth into the bottom of the roasting pan.
- 6Cover the pan with aluminum foil and roast in the preheated oven for 2-3 hours, or until the internal temperature reaches 145°F (63°C).
- 7Remove the foil for the last 30 minutes of cooking to allow the roast to brown.
- 8Once done, remove the roast from the oven and let it rest for 15 minutes before slicing.
- 9Serve the sliced pork with the roasted vegetables and pan juices.
