2 tbsp olive oil
1 tbsp salt
1 tsp black pepper
1 tbsp garlic powder
1 tbsp onion powder
1 tsp dried thyme
1 tsp dried rosemary
1 cup chicken broth
1 onion, quartered
4 carrots, cut into chunks
4 potatoes, cut into chunks

Preheat the oven to 350°F (175°C).

In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, thyme, and rosemary.

Rub the olive oil all over the pork roast, then coat it with the spice mixture.

Place the pork roast in a roasting pan and surround it with the quartered onion, carrots, and potatoes.

Pour the chicken broth into the bottom of the roasting pan.

Cover the pan with aluminum foil and roast in the preheated oven for 2-3 hours, or until the internal temperature reaches 145°F (63°C).

Remove the foil for the last 30 minutes of cooking to allow the roast to brown.

Once done, remove the roast from the oven and let it rest for 15 minutes before slicing.
