1 tsp dried thyme
1 tsp dried rosemary
1 cup chicken broth
1 onion, quartered
4 carrots, cut into chunks
4 potatoes, cut into chunks

Preheat the oven to 350°F (175°C).

In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, thyme, and rosemary.

Rub the olive oil all over the pork roast, then coat it with the spice mixture and brown sugar.

Spread the Dijon mustard over the pork roast after applying the spice mixture.

Place the pork roast in a roasting pan and surround it with the quartered onion, carrots, and potatoes.
