Place a pound of carrots and enough chicken broth to cover them into a saucepan.
Bring to a boil, then reduce to a simmer and cook until a fork pierces the carrots easily, about 20 minutes.
Drain the carrots, reserving the broth in a bowl.
In the empty saucepan, add 2 tablespoons of butter and 2 tablespoons of flour; cook together to make a roux until it smells like popcorn.
Slowly whisk the reserved chicken broth into the roux to avoid lumps.
Add the drained carrots back into the thickened broth and blend using a stick blender to desired smoothness.
Season with salt, cayenne pepper, and half and half.
