Whole wheat flour adds fiber; cornstarch is often cheaper.

Chop the onion finely.

Grate the potatoes using a food processor or by hand.

Soak the grated potatoes in a bowl of cold water for about 10 minutes to prevent browning and remove unwanted starch.

In a bowl, add the drained potatoes, chopped onion, eggs, salt, pepper, and flour.

Squeeze out excess moisture from the potato mixture until very dry.

Mix all ingredients together well.

Heat oil and butter in a pan until hot.

Place about 1 tablespoon of the potato mixture in the pan and cook for 4 to 5 minutes on each side until golden brown.

Remove the pancakes and place them on a paper towel to absorb excess fat.
