4 medium size potatoes (about 1 -1/2 lbs)
2 medium onions, grated or minced
1 egg
2-3 tbsp. all-purpose flour
1 tsp. sea salt
1/4 tsp. black pepper

Scrub potatoes well, peel and keep in water.

Grate onions using food processor attachment if available.

Grate potatoes, mix with the onions and add salt, egg, and flour. Combine all well. Add more flour for a firmer pancake. The mixture should be still liquid enough to easily spoon it.

Heat large frying pan with 3 tbsp. of oil over moderate heat. When pan is warmed, spoon mixture with a tablespoon and fry on one side until golden brown; turn down heat if too dark in color.

Turn over pancake and fry for the same amount of time.

Serve potato pancakes warm with either mayonnaise, sour cream, or mushroom sauce.
