Whole wheat flour adds fiber; cornstarch is often cheaper.

Peel the potatoes and place them in a plastic bag to minimize mess.

Chop the onions finely and place them in a bowl.

Grate the potatoes using a box grater with the wide side.

Squeeze out excess moisture from the grated potatoes.

Combine the grated potatoes with the chopped onions in a large bowl.

Add 2 eggs to the mixture.

Add 4 tablespoons of flour to the mixture.

Season with about 1 teaspoon of salt and 1/2 teaspoon of black pepper.

Mix well, using hands if preferred.

Heat about 1 cm of oil in a wide skillet until hot.

Reduce the heat to medium after the oil is hot.

Using two tablespoons, scoop the mixture and drop it into the hot oil.

Fry until golden brown on one side, then flip and cook until golden brown on the other side.
