Grate Yukon Gold and Idaho potatoes and place them in water to prevent oxidation.

Drain the grated potatoes, reserving the starch at the bottom of the bowl.

Pass half of the grated potatoes through a food processor with onion until blended.

Combine the blended mixture with the riced Yukon Gold potatoes.

Add 2 beaten eggs, matzo meal, ground white pepper, and salt to the potato mixture.

Mix everything together using hands until combined.

Heat oil in a large skillet over medium heat until shimmering.

Scoop spoonfuls of the potato mixture into the hot oil, flattening them slightly.

Fry latkes until golden brown and crispy on both sides.
