4 cod filets, 6 oz each
1 Tbs olive oil
2 Tbs butter
1 tsp smoked paprika
salt and pepper
1 jar (16 oz) roasted red bell peppers, drained
1/2 cup roasted almonds
1/4 cup sun dried tomatoes, chopped
3 garlic cloves, chopped roughly
1 Tbs red wine vinegar
1 tsp smoked paprika
salt and pepper to taste
1/2 cup extra virgin olive oil

Heat butter and olive oil in a large non-stick pan over medium high heat.

Sprinkle each fish filet with smoked paprika, salt and pepper.

Once oil is hot, carefully add the fish. Reduce heat to medium and cook fish until golden and cooked through on both sides, about 4 minutes per side.

Remove from heat.

In a food processor or blender, combine all sauce ingredients except the olive oil. Blend until all ingredients are mixed, then with the motor running, stream in the olive oil.

Once everything is combined into a nice sauce, season with salt and pepper to taste. Serve with fish.
