This cut is celebrated for its rich flavor and tenderness when cooked properly. In the U.S., it has gained popularity in Tex-Mex cuisine, often featured in fajitas and tacos. Its versatility and robust taste make it a favorite for grilling enthusiasts.

Marinate the skirt steak by mixing 1/4 cup granulated sugar, 1/4 cup water, and 1/2 cup fish sauce in a bowl.
Add 1/4 cup fresh lime juice to the marinade and stir to dissolve the sugar.
Cut the skirt steak into two pieces for easier handling.
Place the steak in a Ziploc bag, pour the marinade over it, and remove the air before sealing the bag.
Rub the marinade into the steak and refrigerate for about 1 hour.
While the steak is marinating, gather fresh vegetables from the garden for a salad.
Prepare a dressing by whisking together about 2 tablespoons of lime juice, 1/4 cup olive oil, salt, and pepper, then add about 1 tablespoon of yogurt and whisk until combined.
Slice 2 shallots thinly using a mandolin or by hand.
Heat neutral oil in a pan over medium heat and add the sliced shallots to fry until golden and crispy, about 15 minutes.
Remove the crispy shallots and place them on a paper towel to drain excess oil.
In a bowl, combine fresh mint, carrot tops, chives, basil, and fresh cilantro with torn lettuce and snap peas for the salad.
Cover the salad with a damp paper towel to keep it fresh.
Preheat the grill to about 400 degrees Fahrenheit for grilling the steak.
