Homemade Beaver Tails

Cultural Context

Originating from Ottawa, Beaver Tails are a beloved Canadian pastry resembling the shape of a beaver's tail, often sold at fairs and festivals. Traditionally topped with sweet spreads and toppings, they are a symbol of Canadian street food culture. Today, variations can be found across Canada and beyond, with toppings ranging from classic cinnamon sugar to modern twists like fruit and chocolate.

1

Prepare the ingredients by bringing the eggs to room temperature and warming the milk and water.

2

Use a candy thermometer to ensure the water temperature is between 110 and 115 degrees Fahrenheit for the yeast activation.

3

In a mixing bowl fitted with a paddle attachment, add warm water, followed by 5 teaspoons of quick rise instant yeast and a pinch of sugar. Mix and let it sit for about 5 minutes.

4

Add warm milk to the yeast mixture, ensuring the temperature is still around 110 to 115 degrees Fahrenheit. Mix well.

5

Add sugar, salt, vanilla, and break in the eggs. Then add oil and slowly start adding flour in batches, mixing until fully incorporated.

6

Transfer the dough to a clean floured surface and knead for 3 to 7 minutes until it bounces back when pressed with a finger.

7

Transfer the dough to an oiled bowl, cover tightly with plastic wrap, and place it in the microwave (not turned on) to rise for 1 hour.

8

After 1 hour, press the dough down gently and transfer it to a floured surface. Cut it into 18 pieces using a bench scraper or knife.

9

Shape each piece into small buns and cover with a clean kitchen towel to prevent drying.

10

Use your hands or a rolling pin to shape each bun into ovals. Roll out all the beaver tails.

11

Heat vegetable oil to about 350 degrees Fahrenheit and prepare a surface lined with paper towels for the fried beaver tails.

12

Fry each beaver tail for about 1 minute on each side, checking for a golden brown color to avoid burning.

13

If any beaver tails puff up while frying, roll them again to stretch them out for better frying.

14

Top the fried beaver tails with cinnamon sugar, Nutella, peanut butter, bananas, caramel, or sprinkles.
