Homemade Beaver Tails

Cultural Context

Originating from Ottawa, Beaver Tails are a beloved Canadian pastry resembling the shape of a beaver's tail, often sold at fairs and festivals. Traditionally topped with sweet spreads and toppings, they are a symbol of Canadian street food culture. Today, variations can be found across Canada and beyond, with toppings ranging from classic cinnamon sugar to modern twists like fruit and chocolate.

1

Place 1/2 cup lukewarm water in a mixing bowl and add 5 teaspoons of quick rising yeast and 1/2 teaspoon of white sugar; let sit for about 10 minutes.

2

Warm 1 cup of milk in a separate saucepan until lukewarm, then add it to the yeast mixture.

3

Add 1 1/2 teaspoons of salt, 1 teaspoon of vanilla, and 2 large eggs to the yeast mixture.

4

Add 1/3 cup of white sugar and 1/3 cup of canola oil to the mixture.

5

Begin adding up to 5 cups of all-purpose flour, starting with 2 cups and mixing well, then add another 2 cups and mix again until the dough is elastic.

6

Turn the dough out onto a floured board and knead it until firm and smooth, adding enough flour to prevent stickiness.

7

Grease a bowl lightly with oil or butter, place the dough in it, cover with saran wrap or a warm towel, and let it rise for 30 to 40 minutes until doubled in size.

8

Pour canola oil into a saucepan about 4 inches deep and heat it to 385°F, using a thermometer to monitor the temperature.

9

Once the dough has risen, dump it onto a floured board, dust the top with flour, and cut off pieces of dough about the size of a small apple.

10

Shape each piece into an oval and roll them out to about 1/4 inch thick.

11

Fry the shaped dough in the hot oil, turning them with tongs until golden brown, about a few minutes per side.

12

Remove the fried beaver tails and place them on a cookie sheet lined with parchment paper.

13

Melt peanut butter in the microwave and place it in a ziplock bag for decorating later.

14

Spread chocolate hazelnut spread over the top of the beaver tails and sprinkle with Reese's Pieces and drizzle with melted peanut butter.

15

Optionally, top with sliced bananas and powdered sugar.
