Heat the mixture in a bain-marie until it reaches approximately 45-50°C to dissolve the sugar.
Transfer the mixture to a blender and beat at high speed until it reaches a very firm consistency.
Incorporate 1 teaspoon of vanilla essence into the meringue and mix well.
Sift bitter cocoa powder over the meringue and incorporate it using a mixer or spatula.
Prepare tartlets with a combination of vanilla and chocolate sable dough.
Fill the tartlets with dulce de leche pastry.
Decorate the tartlets with the meringue, creating zig-zag patterns and other designs.
Place the decorated tartlets in the fridge for about 2 hours to allow the meringue to firm up.
Optionally, decorate some tartlets with melted chocolate and others with chocolate-dipped cereal dragees.
