Preheat the oven to 350°F (175°C).
In a bowl, mix semolina, all-purpose flour, and yeast.
Add melted butter and mix until crumbly.
Stir in powdered sugar, salt, and ground cinnamon.
Gradually add water and mix until a dough forms.
Knead the dough gently until smooth, then cover and let rest for 30 minutes.
Prepare the filling by blending dates, walnuts, and a splash of orange blossom water until smooth.
Divide the dough into small balls and flatten each ball in your palm.
Place a teaspoon of filling in the center and fold the dough over to enclose it.
Shape the filled dough into a round or oval shape, then press into a ma'amoul mold if available.
Place the cookies on a baking sheet lined with parchment paper.
Sprinkle sesame seeds on top for garnish.
Bake for 15-20 minutes until lightly golden.
Remove from the oven and let cool completely before serving.
