Shred 500g of filo pastry into tiny pieces and let it dry for 30 minutes.
Boil an orange in a pan of water for 1 hour until soft.
Blend the boiled orange with 1 teaspoon of vanilla extract, 1 tablespoon of baking powder, and 5 eggs.
Add 200ml of olive oil to the blender and mix well.
Prepare a syrup by combining 250g of sugar, 300ml of water, juice of an orange, and a cinnamon stick in a saucepan.
Pour half of the shredded filo into a baking dish and fluff it up.
Pour in half of the custard mixture over the filo.
Add the remaining filo on top and pour the rest of the custard over it.
Bake in the oven at 180°C for 35 minutes.
Prick the cake with a fork after baking to allow the syrup to soak in.
Pour the syrup over the cake and let it absorb for 5-10 minutes before serving.
