Moussaka with Ground Meat

1 kg peeled zucchini cut into cubes
500 g minced meat
2 finely chopped onions
3 eggs
1 diced red bell pepper
1 diced carrot
2 tablespoons tomato paste
200 g sour cream
150 g grated cheese
1 bunch chopped dill

Heat 50 ml of oil in a pan.

Add 2 finely chopped onions, 1 diced carrot, and 1 diced red bell pepper to the hot oil.

Sprinkle a little salt over the vegetables.

Sauté the vegetables for about 10 minutes until they soften, stirring occasionally.

Once the vegetables are soft, add 500 g of minced meat to the pan.

Add freshly ground pepper to the meat mixture.

Cook until the meat changes color, stirring occasionally.

Add 2 tablespoons of tomato paste to the meat and vegetable mixture.

Stir and let it cook until the liquid released by the meat evaporates, stirring occasionally to prevent sticking.

Once the liquid has evaporated, add 1 bunch of chopped dill and stir well, then turn off the heat.

In a larger dish, add the sautéed zucchini cubes and the meat and vegetable mixture, mixing them well.

Grease a tray with a little oil and pour the mixture into the tray, spreading it evenly.

In a bowl, mix 3 eggs with 200 g of sour cream.

Pour the egg and sour cream mixture over the moussaka, distributing it evenly across the surface.

Sprinkle 150 g of grated cheese over the top of the moussaka.

Place the tray in a preheated oven at 180°C.

Bake for 1 hour until the moussaka is ready, then remove it from the oven.

Let the moussaka cool down a bit before serving.
