Thai Basil Beef, known as 'Pad Krapow Moo', is a popular street food dish in Thailand, often enjoyed for its bold flavors and quick preparation.
Introduce the dish as savory, spicy, and packed with basil flavor.
Mention that the dish can be served with noodles or rice, topped with a fried egg.
Prepare the seasoning mix: combine equal portions of light soy sauce, oyster sauce, fish sauce, and dark soy sauce, along with sugar and 2 tablespoons of water.
Chop garlic and chilies; use mortar and pestle or mince finely if necessary.
Cut long beans on the bias to about 1 centimeter long and dice the onion.
Heat oil in a wok and stir-fry the garlic and chilies until aromatic (about 0.5 to 1 minute).
Add minced beef to the wok and stir-fry until it starts to cook and releases juice; remove beef and juice from the wok.
Add oil to the wok and stir-fry long beans and onion for 1-2 minutes until soft, adding water if it becomes too dry.
Return the beef to the wok and combine with the vegetables.
Add the prepared seasoning mix to the beef and taste to adjust seasoning if necessary.
Prepare a cornstarch slurry by mixing 1 teaspoon of cornstarch with 2 tablespoons of cold water; add to the beef and stir quickly to thicken the sauce.
Add 1 cup of basil leaves to the beef and stir until wilted; turn off the heat.
For the fried egg, heat 3-4 tablespoons of oil in the wok until smoking, then gently add the egg.
Allow the egg to fry until the edges are golden, gently pushing it to prevent sticking, without flipping it.
Remove the fried egg and drain the oil; serve the basil beef with rice and the fried egg on top, garnished with fresh chili and basil.
