Cook sliced cabbage and onion in a dry pan. Add chickpea flour, Italian seasoning, and salt. Cook for 3–5 minutes until slightly softened.

Pierce sweet potato, lightly spray with oil, and roast at 410°F (210°C) for 30 minutes.

Blend roasted sweet potato with oat milk, apple vinegar, and olive oil until smooth.

Mix spelt flour, salt, and baking powder in a bowl. Add the sweet potato mixture and form a soft dough. Let rest for 15 minutes.

Roll into an 8-inch (20 cm) circle, place the cabbage filling in the center, gather the edges, seal, flip, and gently flatten.

Cook the vegan cabbage pie in a parchment-lined pan on low heat: cover and cook for 7 minutes, then make small steam holes and cook for 20 minutes more. Flip and cook the other side for 20 minutes.

Rest for a few minutes before slicing and serve warm.
