Start by cracking eggs into a bowl and set aside.
Add the flour to your countertop and sprinkle with salt.
Combine the flour and salt, then create a hole in the center of the flour.
Add the eggs and whip with a little bit of water.
Knead the dough until it forms a smooth ball.
Cut a piece of the dough off the large dough ball and form it into a smaller ball.
Sprinkle the work surface with flour and roll out your tiny dough ball into a thin circle.
Add a touch of water to the edge of the dough circle.
Add your cabbage to the center of the circle.
Fold over the dough and pinch to seal. Optionally, use a fork to seal the edges for a better seal.
Continue this process until you have made all the cabbage pierogi you want.
Boil a pot of water and add the pierogi to the boiling water.
Cook the pierogi until the dough is completely cooked.
Add the cooked pierogi to a strainer and soak in cold water.
Preheat your griddle to 350°F or medium on a gas griddle.
Use your favorite cooking oil or butter on the griddle.
Once the griddle is hot, add the pierogi to the butter.
Season the pierogi with salt and pepper to taste.
Cook until golden brown on both sides, ensuring they are heated all the way through.
Remove the pierogi and serve right away.
