Baked Chicken with Lemon and Garlic Sauce

3 pieces chicken thighs and drumsticks
3 tbsp vegetable oil
1 tbsp tomato paste
1 tbsp cornstarch
1 tbsp all-purpose flour
1 lemon (juice only)
2 tbsp mayonnaise
1 tbsp chili sauce (optional)
1/2 cup milk
1 tsp dried parsley

Prepare the chicken by cleaning it thoroughly.

Cut small slits on one side of the chicken pieces to allow marinade to penetrate.

Place the chicken pieces in a bowl.

Add 3 tbsp of vegetable oil to the bowl with chicken.

Add 1 tbsp of tomato paste to the chicken.

Add 1 tbsp of cornstarch to the chicken.

Add 1 tbsp of all-purpose flour to the chicken.

Squeeze the juice of 1 lemon half into the bowl, sieving out the seeds.

Mix the marinade thoroughly with your hands, ensuring all chicken pieces are covered, including inside the slits.

Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or overnight for better flavor.

After marinating, remove the plastic wrap and place the chicken in a baking tray lined with parchment paper.

Bake the chicken in the oven at 200°C for a total of 40 minutes.

After 20 minutes, remove the chicken and turn it to bake the other side for an additional 20 minutes or until crispy.

Scoop about 2 tbsp of chicken juices from the baking tray to use in the mayonnaise sauce.

In a pan, add the 2 tbsp of chicken juices and 2 tbsp of mayonnaise.

Add 1 tbsp of chili sauce (optional) to the pan.

Pour in 1/2 cup of milk to the pan.

Season the sauce with 1 tsp of dried parsley.

Set the heat to low and stir the sauce continuously for about 5 minutes until it thickens and begins to boil.

Once the sauce has thickened, remove it from heat and place it in a bowl.

Serve the baked chicken with the mayonnaise sauce spread on top.
